Last week when we were on our Mexican food kick we made chorizo. Since I was getting kind of tired of Mexican I was trying to think of a non traditional way to use chorizo and I came up with pot stickers.
Chorizo Pot Stickers
Chorizo
2 Pounds ground pork
1 Tablespoon cayenne pepper
1 Tablespoon ancho chili powder
1 Tablespoon chipotle powder
2 Tablespoons cumin
1/4 Cup paprika
2 Cloves garlic minced
2 Tablespoon red wine vinegar
Mix all the ingredients together and refrigerate over night.
Filling for pot sticker
2 Cups Chorizo
1 Large potato baked
Peel and mash the potato. Mix with the chorizo.
Pot Stickers
makes 30
30 Round dumpling wrappers
1 Chorizo/Potato mixture
1 Teaspoon of oil
1/2 Cup Water
Place one teaspoon of the chorizo mix on the bottom half of the wrapper, moisten the edges with water, fold over and crimp edges. Heat oil and water in pan, add pot stickers and cover. Steam for five minutes. Take off lid, water should evaporate and pot stickers should brown and crisp. Do not turn pot stickers.
