Oven dried tomatoes are a great way to preserve tomatoes. I use cherry tomatoes because I have a lot of them but you can use Romas and cut them in half.
2 Cups Chery Tomatoes
2 Dried Chili Peppers
3 Tablespoons Extra Virgin Olive Oil
1 Tablespoon Dried Thyme (you could also use Oregano)
Place on oven sheet pan and cook in a 250 oven for 3 hours (it my take a like longer)
They come out still moist but are a little leathery, put into a jar. Top with more oil and store in the refrigerator.
Use in pastas, pizzas or salads.
