My garden had eggplant and cherry tomatoes so I decided to make a Moroccan Eggplant Salad.
1 Eggplant
1 Cup Cherry tomatoes
2 Tablespoons Extra Virgin Olive Oil
1 Pinch Thyme
1 Teaspoon Cumin
1 Glove Garlic
Place all ingredients in a roasting pan and roast until eggplant is soft and caramelized. Place all ingredients in food processor and pulse a few times until chunky.
Serve drizzled with oil.
