Dr Seuss? I found some purple cauliflower at Whole Foods and that is what it reminded me of.
This salad uses a variety of vegetables to create great texture and taste. I dressed it simply with argan oil and lemon juice. Argan oil is an oil from Morocco that is made from the kernels of the Argan tree. In the past Berber tribesmen would collect the undigested kernels from goats to press the oil out. Today the production of this oil benefits women in Morocco through a program with UNESCO. It has an unusual nutty flavor and also is said to hold some medicinal qualities.
For the salad you could really use any vegetable you like. I wanted to find a balance in texture hence the crispy jicama, soft cauliflower.
2 Cups cauliflower, blanched until fork
1/2 Cup jicama, diced
1/2 Cup long beans cut in to 1/2 inch pieces
1/4 Cup red onion diced
2 Tablespoon chervil, minced
1/2 Cup radicchio roughly chopped
2 Tablespoons lemon juice
1 Tablespoon aragan oil
1/2 Tablespoon extra virgin olive oil
Fresh ground pepper
Toss all the ingredients together and serve in cups of radicchio leaves.
My husband had smoked some New York strips for a party that we were catering and we had one left over and it was calling out “Steak Sandwich”. I wanted this to be the best steak sandwich ever. I wanted to include classic steak house sides in to my sandwich. This is what I came up with.
Smoked New York Steak Sandwich with Creamed Spinach Spread, Sautéed Mushrooms and Onions, Spicy Mustard Mayonnaise, Beef Steak Tomato and Arugula
makes 1 sandwich
3-4 Thin slices of steak, cooked to your
preference (I used New York, but Rib
Eye would be excellent also)
1 6 inch piece of the best baguette you
can find, sliced in half and toasted
1 Tablespoon Creamed Spinach Spread
(see recipe below)
1 Tablespoon Spicy Mustard,
1/4 Cup sautéed mushroom
1/4 Cup sautéed onions
2 Tomatoes, slice very thick
4 Arugula leaves
Spread spinach spread over onside of the bread and the spicy mustard, mayonnaise on the other half. On the bottom half place the steak, followed by the onions and mushrooms, tomato and arugula. Top with bread and enjoy.
Mango season is upon us here in Hawaii. The first of the ripe mangos are appearing. I do not have a tree but my surrounding neighbors do. I made this mango from my neighbors rare white pirie tree. I served it on top of a pan fried seabass but it would be great with grilled pork or even chips.
makes about 2 cups
1 Mango, diced
1 Large roasted red bell pepper,
1/2 Jalapeño, chopped
1/2 Red Onion, finely diced
1 Tablespoon cilantro,chopped
1 Tablespoon Italian parsley,
1 Teaspoon cumin
1 Tablespoon lime juice
1/2 Teaspoon Chipotle powder
Combine all ingredients and let sit for at least 15 minutes.
Oven dried tomatoes are a great way to preserve tomatoes. I use cherry tomatoes because I have a lot of them but you can use Romas and cut them in half.
2 Cups Chery Tomatoes 2 Dried Chili Peppers 3 Tablespoons Extra Virgin Olive Oil 1 Tablespoon Dried Thyme (you could also use Oregano)
Place on oven sheet pan and cook in a 250 oven for 3 hours (it my take a like longer) They come out still moist but are a little leathery, put into a jar. Top with more oil and store in the refrigerator. Use in pastas, pizzas or salads.
