My garden has been neglected, for about eight months now. Last May I had a beautiful garden, with cucumbers growing like weeds. I had just started a blog and had posted the pictures with pride. Then out of nowhere I got pneumonia, and was down and out for awhile. The garden got over grown with weeds, the blog put on a back burner. After I recovered life went on, I had a 9 month old to look after, a puppy to train, a international conference to plan... I just didn't have time for either the blog or the garden. After the holidays I finally got the blog up and running but, my poor garden sat there with no one to take care of her. Well, I have slowly been trying to get her into shape. I have harvested a couple of cucumbers and have a tomato vine that has gone wild, growing up to ten feet high producing perfect cherry tomatoes. I have some fennel going, and the arugula never minded the neglect and is plentiful. Everyday I put a little work into her. Hopefully we will be brimming with veggies soon.
1 Japanese Cucumber, thinly sliced
1 Cup Cherry Tomatoes, quartered
2 Springs of Fennel tops, chopped
2 Tablespoons Extra Virgin Olive Oil
Salt and freshly cracked pepper
Toss the tomatoes with fennel, slat and pepper. Arrange the cucumber in a circle around the plate, put the tomatoes in the middle. Drizzle tomatoes and the cucumbers with Olive Oil. Salt and pepper the cucumbers.
