These cashews are great for cocktail parties and are very addictive. They would be great with the Kaffir - Lemon Grass Vodka Martini .
5 Whole dried arbol chilis
1 Tablespoon Olive Oil
1 # raw cashew nuts
6 Kaffir lime leaves sliced thinly
3 Green Onions cut in to one inch pieces, white and green
Salt
Heat oil and add chili, saute chili for one minute , add nuts stirring constantly. The nuts can burn easily because of their high fat content, so keep your eye on them. When they start to brown add the lime leaves and onion. Once they get sufficiently golden take off heat, remove from pan immediately because they will continue to cook. Add salt to taste
